Abstract

The invention relates to a method for destroying harmful micro-organisms in liquids by means of short-time high-temperature heating, e.g. by ultra-high temperature heating of liquid foods such as milk or other liquids. In a first step, the liquid is heated in or by a micro-heat exchanger with up to approximately 10000 micro-channels per cm³ heat exchanger volume, for an extremely short time and with a gradient of at least 200 K/s.
